Its flowers can be purple, blue, white or red and are grouped in spikes. Known as a vegetable as a condiment, its fresh leaves are used as herbs in soups, salads, sauces. It is also found in the composition of certain alcohols and liqueurs (Grande-Chartreuse, Bénédictine, Pastis…)
